Quinoa Salad Recipe
TOMATO & SPINACH QUINOA SALAD RECIPE
I originally wrote this blog post back in 2015 but I decided it was time for a face lift! This recipe is still one of our favorites, all these years later. It’s truly the perfect meal or side, and the perfect dish to bring to any occasion. And if you’re a mediocre cook like myself, don’t worry, this is super simple.
Ingredients:
Organic Quinoa
Annies Organic Goddess Dressing (light or regular)
Organic Spinach
Organic Cherry Tomatoes
Lemon Juice
Optional Ingredients:
Feta Cheese (topping)
Cucumber (cut and mix in with salad)
Avocado (topping)
*You can of course adjust the ingredients based on your preference. If you’d like the salad to be primarily quinoa, add more. If you’d like to add extra ingredients, do. If you’d like to get the exact salad as pictured above, follow these steps.
Step 1: Cook your quinoa. I typically cook one cup of uncooked quinoa. This will make the perfect amount for your salad. Once it’s cooked, add 3 cups cooked quinoa to a mixing bowl.
Step 2: Add 3 handfuls of spinach to the mixing bowl.
Step 3: Slice the cherry tomatoes in halves. I use the whole container, like I said, this recipe is so flexible. Add as much or as little of each ingredient! Toss the cut cherry tomatoes in with the spinach and quinoa.
Step 4: Add about 1.5 tablespoons of dressing and 3 tablespoons of lemon juice. Mix well.
Suggestion: start with this amount of dressing and lemon juice and then you can add more of each if you’d like. My favorite way to make this recipe is based on taste, and everyone prefers different dressing levels! I personally prefer a more tangy flavor from the lemon juice, but you might like this salad more creamy from the dressing.
Step 5: Add toppings. I absolutely love feta cheese on this salad and if I’m looking to make this a heartier meal I will add some avocado.
